What lovely colors. I often make green tomato mincemeat with those unfortunate enough to get caught by the seasons. Play chicken with the weather and wait to pick the last the evening before a freeze is forecast. You can also hang the pulled up vines in the basement and the tomatoes will redden but not all that great.
Very curious about that tomato mincemeat – how is that made and used? Do tell!
